Ingredients
MEAT AND VEG:
450g chicken breasts
2 tablespoons olive oil
1 large onion, sliced
2 bell peppers, sliced
3 cloves garlic, minced
FAJITA SEASONING:
1 tsp chilli powder
1/2 tsp cumin powder
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp paprika
1/2 tsp sugar (optional)
Salt and pepper to taste
TO SERVE:
4-6 flour tortillas
Optional toppings: soured cream, guacamole, salsa, grated cheese, chopped jalapenos, lime wedges
Why 'Mamma's' Fiesty Fajitas?
As sad as it is to admit, in my house the notorious British Sunday roast, wasn't eaten in our house other than at Christmas - even though I adore the meal now! Instead, our Sunday dinners were dedicated to Fajitas. It goes without saying that my Mumma makes the BEST fajitas and I consider her recipe to be the Holy Grail of any homemade Mexican meal and because I hold it so close to my heart, it was something I wanted to share with you all. So, when you finally have your first bite of that spicy, fiesty Mexican goodness, you'll have my mum to thank for this one!
Cooking Instructions
Start by cutting your chicken, into strips or cubes. Than in a large bowl, combine the chicken and ingredients listed from the fajita seasoning and toss to coat the meat evenly. Set aside for 10-15 minutes to marinate.
Heat one tablespoon of olive oil in a large frying pan over a medium-high heat. Once the oil is hot, add the marinated chicken and cook for 2-3 minutes.
After those 2-3 minutes, add in your garlic, sliced bell peppers and diced onion and cook stirring occasionally, until chicken is browned and onions begin to look translucent and caramelised. This is usua;;uybe another 3-4 minutes.
Once all cooked, taste test and adjust the seasoning if needed!
Now it's time to warm up those tortillas in a dry frying pan, or as easily put them in the microwave for 30 seconds to a 1 minute.
The hard work is over and now you are ready to eat! In my house, we all like to be very hands on with own fajitas, so we serve the mixture, tortillas and optional toppings seperately so that everyone can personalise their own wraps to their own liking! However, if you wish to serve up these Fiery Fajitas for your family, place a scoop of the meat and vegetable mixture onto each warm tortilla, add your desired toppings, dig in and ENJOY!
